Spring Salad

As we welcome spring we welcome a new season of fresh produce, which is exactly what this salad celebrates. Think crisp asparagus, fresh cherry tomatoes, topped with a creamy burrata and our crunchy granola, perfection!

Ingredients

  • 12 asparagus chopped
  • 300g cherry tomatoes
  • 1 burrata
  • 4 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tbsp fennel seeds
  • 2 tbsp balsamic vinegar
  • 1/3 cup of Keto Hana almond granola
  • Pepper

Directions

  1. Mix asparagus, tomatoes, 3 tbsp olive oil, salt, pepper, fennel seeds and balsamic vinegar and bake for 25 min.
  2. Sprinkle on Keto Hana granola and place burrata in the center.
  3. Drizzle remaining 1tbsp of olive oil and add some chilli flakes.
