A favourite at Keto Hana, here’s how you can make these delicious Vegan- Keto Coconut & Hazelnut Cookies at home.
2 tbsp sweetener (add more to taste)
2 tbsp lightly roasted hazelnuts
2 tbsp organic desiccated coconut
2 tbsp coconut flour
1 organic egg
1 tsp baking powder
50g organic grass-fed butter - sub for coconut oil for vegan
1 vanilla pod
Sprinkle of cinnamon
How to make Keto Coconut & Hazelnut Cookies
- Mix all of your dry ingredients in a bowl, including the vanilla pod, but leave out your hazelnuts as it’s easier if you fold these in last.
- Beat your egg and melt your butter before adding both to the bowl slowly. Mix thoroughly. Once this is done, fold in your hazelnuts and any added goodies (maybe some chocolate chunks!) you’d like to add. If the mixture seems too stodgy, then melt some more butter and add it in slowly. This will ensure your cookie is nice and soft on the inside.
- Line a tray with baking parchment and spoon out some of your cookie dough using your hands or an ice cream scoop if you have one. Mould in between your hands to create a ball, then place on your tray and gently press the ball down, making that cookie shape.
- Bake at 160 degrees for 20 minutes, or until golden. Don’t forget to turn your tray around halfway through to ensure that even bake. Once done, leave to cool - if you can resist the smell ;)
