Gingerbread Snowflake Cookies

How to make Gingerbread Snowflake Cookies

Ingredients

  • 230g blanched almond flour
  • 100g Keto Hanna Gingerbread granola, dusted
  • 1 tbsp cinnamon
  • 1tsp ginger
  • 1⁄2 teaspoon baking soda
  • 1⁄4 teaspoon fine salt
  • 1 cup granulated sweetener
  • 100g butter, at room temperature
  • 1 large egg

Recipe

  1. In a large bowl, whisk together almond flour, dusted granola, baking soda and salt. Set aside.
  2. Cream together sweetener and butter until fluffy. Add egg, vanilla and sour cream, mix until smooth.
  3. Add dry ingredients
  4. Wrap the dough as a disk and place in freezer for 2 hours - you want the dough to be as cold as possible, but still pliable.
  5. Preheat the oven to 180 ̊C
  6. Roll dough into a 1⁄4" thick circle. Cut the cookies in snowflakes and stars.
  7. Bake 13 to 15 minutes
  8. Let cool and decorate with sugar free icing.
