Keto Courgette & Feta Fritters Recipe

Ingredients

  • 2 grated courgettes
  • 1⁄2 block of feta
  • 300g KETO HANA coconut & almond granola
  • 1 tbsp of zaatar
  • 1⁄4 tsp of salt
  • 4 tbsp of Greek yoghurt
  • 10g of chopped dill
  • Juice of 1⁄2 lemon
  • Pinch of salt
  • 1-2 garlic cloves

How to Make Courgette & Feta Keto Fritters

  1. Drain the grated courgettes (either pressing through a colander or in a nut milk bag)

  2. Blend your coconut & almond granola in a food processor until dusted and add to grated courgette.

  3. Add egg, zaatar, salt and mix until well combined.

  4. Add feta cheese and mix.

  5. To a non-stick pan with olive oil, add dollops of the mix and fry in both sides (almost as pancakes).

  6. Mix Greek yoghurt, dill, lemon, salt
