These courgette and feta fritters couldn't be easier to make and are the perfect snack to pass around at parties. Flavours of dill, lemon, garlic and zaatar are matched with our crunchy granola for the perfect bite.
Ingredients
- 2 grated courgettes
- 1⁄2 block of feta
- 300g Keto Hana Coconut & Almond Granola
- 1 tbsp of zaatar
- 1⁄4 tsp of salt
- 4 tbsp of Greek yoghurt
- 10g of chopped dill
- Juice of 1⁄2 lemon
- Pinch of salt
- 1-2 garlic cloves
How to Make Courgette & Feta Keto Fritters
- Drain the grated courgettes (either pressing through a colander or in a nut milk bag)
- Blend your Coconut & Almond Granola in a food processor until dusted and add to grated courgette.
- Add egg, zaatar, salt and mix until well combined.
- Add feta cheese and mix.
- To a non-stick pan with olive oil, add dollops of the mix and fry in both sides (almost as pancakes).
- Mix Greek yoghurt, dill, lemon, salt
